Wholesome and sweetened perfectly with dates and maple syrup, these are delicious and satisfying! I’m not a raisin fan, but if you are, go for those! If you like wholemeal flour, other recipes that use it are soda bread and wholemeal power pancakes!

Bran Muffins

Servings: 12 muffins


  • 45 grams dates
  • 160 grams applesauce
  • 1 egg
  • 250 grams milk (can use oat milk)
  • 75 grams molasses
  • 50 grams wheat bran
  • 250 grams Irish wholemeal flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1.8 oz walnuts
  • 2 tbsp maple syrup (to coat bottoms)


  • Butter muffin tin. Preheat oven to 350℉.
  • Chop dates finely. Mix together dates, applesauce, egg, milk, and molasses in a bowl.
  • Stir in wheat bran, flour, baking powder, baking soda, and walnuts.
  • Scoop into muffin tins. Bake 20-25 minutes.
  • Remove from muffin tin and soak muffin bottoms in maple syrup. Enjoy!
