Wholesome and sweetened perfectly with dates and maple syrup, these are delicious and satisfying! I’m not a raisin fan, but if you are, go for those! If you like wholemeal flour, other recipes that use it are soda bread and wholemeal power pancakes!
Bran Muffins
Servings: 12 muffins
Ingredients
- 45 grams dates
- 160 grams applesauce
- 1 egg
- 250 grams milk (can use oat milk)
- 75 grams molasses
- 50 grams wheat bran
- 250 grams Irish wholemeal flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1.8 oz walnuts
- 2 tbsp maple syrup (to coat bottoms)
Instructions
- Butter muffin tin. Preheat oven to 350℉.
- Chop dates finely. Mix together dates, applesauce, egg, milk, and molasses in a bowl.
- Stir in wheat bran, flour, baking powder, baking soda, and walnuts.
- Scoop into muffin tins. Bake 20-25 minutes.
- Remove from muffin tin and soak muffin bottoms in maple syrup. Enjoy!
