These cupcakes are really good and moist and the perfect sweetness! If I could make any chocolate cupcake for myself, it would be this one. Date-sweetened Chocolate Cupcakes

  • Muffin tin
  • Measuring cups and spoons

Ingredients

  • 8 Medjool dates (or 15 Deglet Noor)
  • 2 tbsp oil
  • 7 tbsp applesauce (4 oz)
  • 2 eggs
  • cup buttermilk
  • ½ cup all purpose flour
  • ½ cup spelt flour (can sub all purpose flour)
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 tsp espresso powder (optional)
  • 1 recipe Simple Chocolate Icing: 3 oz chocolate melted with 2 tbsp milk or water

Instructions

  • Preheat oven to 350˚F. Butter muffin tin. Chop 8 Medjool (or 15 Deglet Noor) dates.
  • Blend in processor oil, apple sauce, 1 egg, and chopped dates. Transfer to mixing bowl.
  • Mix in the second egg and buttermilk.
  • In a measuring cup, stir together all purpose flour, spelt flour, cocoa powder, baking powder, baking soda, salt, and espresso powder if you’d like.
  • Pour the flour mixture into the wet batter and stir until just combined. Pour into muffin tins.
  • Bake at 350˚F for ~25 minutes, until cupcake tops are springy to the touch. Allow to cool while making Simple Chocolate Icing. Then ice and enjoy!
