Preheat oven to 350˚F. Butter muffin tin. Chop 8 Medjool (or 15 Deglet Noor) dates.
Blend in processor oil, apple sauce, 1 egg, and chopped dates. Transfer to mixing bowl.
Mix in the second egg and buttermilk.
In a measuring cup, stir together all purpose flour, spelt flour, cocoa powder, baking powder, baking soda, salt, and espresso powder if you’d like.
Pour the flour mixture into the wet batter and stir until just combined. Pour into muffin tins.
Bake at 350˚F for ~25 minutes, until cupcake tops are springy to the touch. Allow to cool while making Simple Chocolate Icing. Then ice and enjoy!
