These cupcakes are really good and moist and the perfect sweetness! If I could make any chocolate cupcake for myself, it would be this one. Date-sweetened Chocolate Cupcakes
Equipment
- Mixing bowl
- Processor
- Muffin tin
- Measuring cups and spoons
Ingredients
- 8 Medjool dates (or 15 Deglet Noor)
- 2 tbsp oil
- 7 tbsp applesauce (4 oz)
- 2 eggs
- ⅔ cup buttermilk
- ½ cup all purpose flour
- ½ cup spelt flour (can sub all purpose flour)
- ½ cup cocoa powder
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
- 1 tsp espresso powder (optional)
- 1 recipe Simple Chocolate Icing: 3 oz chocolate melted with 2 tbsp milk or water
Instructions
- Preheat oven to 350˚F. Butter muffin tin. Chop 8 Medjool (or 15 Deglet Noor) dates.
- Blend in processor oil, apple sauce, 1 egg, and chopped dates. Transfer to mixing bowl.
- Mix in the second egg and buttermilk.
- In a measuring cup, stir together all purpose flour, spelt flour, cocoa powder, baking powder, baking soda, salt, and espresso powder if you’d like.
- Pour the flour mixture into the wet batter and stir until just combined. Pour into muffin tins.
- Bake at 350˚F for ~25 minutes, until cupcake tops are springy to the touch. Allow to cool while making Simple Chocolate Icing. Then ice and enjoy!
