These pancakes are good not just at breakfast but also on the go. I love them with jam or almond butter on trail runs and on road trips.

Oat Pancakes

Servings: 20 medium pancakes

Ingredients

  • 1 cup oat flour
  • ½ cup all purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • cups buttermilk (or milk + acidic squeeze)
  • 1 egg
  • (Optional) oats as add-in (soak some quick rolled oats in water to soften before using)

Instructions

  • Mix the flour, sugar, baking powder, and baking soda together. Add the buttermilk and egg. Add the optional oats.
  • Cook pancakes on buttered frying pan until they start to bubble, then flip and cook about 30 seconds on the other side. The first batch always is the messiest, but they get better!
