Preheat oven to 375˚F.
In a mixing bowl, blend (with a mixing spoon) butter, sugar, vanilla, and eggs until smooth (optional to save a drop of egg to paint the dough with before baking).
Add flour, salt, and baking powder. Mix well.
Add the chopped nuts and fruit and mix until combined.
Roll dough into 2 logs with ~ 1 ¼ inch thickness and place on baking tray. (Optional) Paint logs with egg wash then sprinkle with extra granulated sugar.
Bake at 375˚F for 20-25 minutes. Slice into biscotti and lay on sides. Bake another 10-12 minutes until lightly browned. Let cool completely. Enjoy!
